Method
- Melt the butter in the microwave for 30 seconds.
- In a stand mixer bowl, combine the melted butter, water, salt, and sugar.
- Add the flour on top, then sprinkle the yeast over the flour.
- Mix on low speed until the dough begins to form.
- Increase the speed and knead for about 8 minutes, until the dough is smooth but firm. If it seems dry, add water one tablespoon at a time.
- Transfer the dough to a lightly oiled bowl, coat the top with a very thin layer of oil, cover, and let it rise until doubled — about 1–1.5 hours.
Shaping the Bites:
- Once risen, divide the dough into 30 equal pieces, about 30 g each. (If you don't have a kitchen scale, eyeball it by dividing the dough into three equal parts, then each third into 10 pieces.)
- Roll each piece into a ball, then stretch slightly into a fat oval shape.
Boiling and Baking:
- Preheat your oven to 180°C (350°F) and line two baking trays with parchment paper.
- Bring 2 liters of water to a boil in a large pot.
- Add 2 tablespoons of baking soda to the boiling water and stir.
- Boil the pretzel bites in batches of 10. As soon as the last one drops into the water, start a 30-second timer.
- Remove the bites with a slotted spoon, drain well, and place on the prepared baking sheets, spaced slightly apart.
- Using kitchen scissors, snip a small cut about one-third deep across the top of each bite.
- Sprinkle with coarse salt.
- Bake for about 15 minutes, until golden brown.
The Honey Mustard Dip:
- Mix the mustard and honey in a small bowl until smooth. Serve alongside the warm pretzel bites.
