These homemade pretzel bites are soft, chewy, and perfectly salty! Pretzel Bites are one of my favorite treats, and there are certain moments in life you don’t realize you’ll treasure until much later.
It was a regular Saturday afternoon, sometime after the world slowly started waking up again from the long, strange sleep of COVID. Zoom calls with friends were turning into actual meetups. Smiles were no longer pixelated. There was a cautious optimism in the air — a feeling that maybe, just maybe, we were finding our way back to normal.

That evening, we had something rare planned: a real date night. Not at a crowded restaurant or a buzzing pub, but something even more special — a cozy evening at home, just the two of us, celebrating the small wins.

To mark the occasion, I wanted to bake something comforting, nostalgic, and festive. Something simple, yet a little special.

They have that magical chewy texture, that salty, golden crust, and they’re just the right size for popping into your mouth one after another (after another). Plus, they’re surprisingly easy to make — no complicated braiding or shaping, no stress about getting it “perfect.”


In fact, these little bites were such a hit that my youngest son proudly admitted to “only” eating seven… although I’m pretty sure it was more.

What Makes This Recipe Special:

  • The Dough: Pretzel bites dough is a little different from regular bread dough. It’s firmer, drier, and a little stubborn at first. Don’t worry if it feels like it doesn’t want to come together — a little patience (and a spoonful or two of water) will do the trick.
  • The Shape: No fancy twists or knots needed! Just roll into balls, then gently stretch into small, plump ovals — about the size of a large grape or a small egg.

Ingredients
  

For the dough:
  • cups Flour 600 g, best use bread flour
  • 300 ml Water
  • 60 g Butter melted
  • 1 teaspoon Salt
  • 2 tablespoons Sugar
  • 1 tablespoon Dry Yeast
For boiling:
  • 2 liters water
  • 2 tablespoons Baking Soda
For the honey mustard dip:
  • 3 teaspoons Mustard
  • 1 teaspoon Honey

Method
 

  1. Melt the butter in the microwave for 30 seconds.
  2. In a stand mixer bowl, combine the melted butter, water, salt, and sugar.
  3. Add the flour on top, then sprinkle the yeast over the flour.
  4. Mix on low speed until the dough begins to form.
  5. Increase the speed and knead for about 8 minutes, until the dough is smooth but firm. If it seems dry, add water one tablespoon at a time.
  6. Transfer the dough to a lightly oiled bowl, coat the top with a very thin layer of oil, cover, and let it rise until doubled — about 1–1.5 hours.
Shaping the Bites:
  1. Once risen, divide the dough into 30 equal pieces, about 30 g each. (If you don't have a kitchen scale, eyeball it by dividing the dough into three equal parts, then each third into 10 pieces.)
  2. Roll each piece into a ball, then stretch slightly into a fat oval shape.
Boiling and Baking:
  1. Preheat your oven to 180°C (350°F) and line two baking trays with parchment paper.
  2. Bring 2 liters of water to a boil in a large pot.
  3. Add 2 tablespoons of baking soda to the boiling water and stir.
  4. Boil the pretzel bites in batches of 10. As soon as the last one drops into the water, start a 30-second timer.
  5. Remove the bites with a slotted spoon, drain well, and place on the prepared baking sheets, spaced slightly apart.
  6. Using kitchen scissors, snip a small cut about one-third deep across the top of each bite.
  7. Sprinkle with coarse salt.
  8. Bake for about 15 minutes, until golden brown.
The Honey Mustard Dip:
  1. Mix the mustard and honey in a small bowl until smooth. Serve alongside the warm pretzel bites.
